Raw Protein Truffles

 

I came up with this recipe by complete accident and out of desperation for having something sweet and healthy at the same time.  As with all my recipes, it is very easy and quick to make and requires only few ingredients.

As you already know I’ve been following a new diet approach for the past few weeks, with the main key points of no refined sugars or refined grains.  This recipe contains no such things :).

 

The other day I discovered an a very delicious new butter – coconut butter.  I was looking for coconut oil and I though that is what I purchased.  When I got home and I tried to use it in my cooking I realized the texture was different.  At first I got a bit confused but then something in my head told me to try it.  And wow, I was surprised how tasty it was, and I came up with the recipe in my head right away.

 

Ingredients 

  • 1. Two tablespoons of Raw Coconut Butter
  • 2. One Scoop of Whey Isolate Protein Mix
  • 3. Two tablespoons of Raw Cacao Powder ( I wrote about the benefits of Raw Cacao )
  • 4. One or two tablespoons of Organic Honey ( I added one )

Mix all of the ingredient together with a fork until the mixture looks like this:

Now roll it into small balls.  You can also sprinkle more raw cacao on the top to give it more of truffle feel.  Refrigerate for 2 hours.

    Ooh! and one more thing.  I substituted Agave Nectar for honey, because I ran out of honey.  Also, I ended up making two batches in one day :)

      Hey, 

      The reason I use coconut butter instead of coconut oil is because of consistency and taste.  I know its sounds weird but coconut butter has the consistency of peanut butter and it tastes like the coconut version of peanut butter.  But coconut oil is an actual oil.  The key ingredient is coconut butter, you can’t really substitute it.

      Coconut butter is so amazing to taste, I discovered it completely by an accident, I was looking for coconut oil and bought the butter thinking it was the same, but when I got home and realized that is’s a whole new thing, then I tried it and I was like Wow it’s delicious :).

    I just revisited this recipe, and I substituted the protein powder for Maca powder.  Maca is a super food, and now I call these “Raw Superfood Truffles”.  Maca has a flavor that just happens to go very nicely with chocolate :)

      Sounds fun, I actually have maca in my fridge right now, I add it to my post workout shake.  Maca is awesome it really helps the muscles to recover faster.

    Maria that sounds yammy, gonna try your recipe.  You know that you can get coconut oil and coconut butter and raw cacao at iherb.com .  All of my Russian friends order stuff from there :)

    Oh my! I just tried these out and they are absolutely delicious! I also added a couple of chopped up dried figs in the batter, plus a couple of hazelnuts into each one of the truffles. Death by chocolate!
