Healthy Salad Recipe


I have a really good and healthy recipe for you, it’s super easy ( as always ) to make and only has a few ingredients. This would be a perfect gourmet salad on the go.  I didn’t add any meat on it but if you like you can add lean chicken breast.  But even without it, it has plenty of protein as well as good fat.



  • Arugula & Goat Cheese ( you can have feta if you don’t like goat cheese )

  • Almonds & A pear

  • 2 table spoons of Macadamia Nut Oil ( or olive oil ) and Apple Cider Vinegar ( about half a cup )

Place Arugula on a plate and add goat cheese.


Cut the pear into small pieces and crush the almonds.

Place cut pear and crushed almonds on a frying pan add a spoon of macadamia nut oil and cook it a bit but not too much, the pears should still be crunchy.

Take it off the pan and place it on a plate on top of the goat cheese. Then take the apple cider vinegar and pour it on a frying pan as well, add a table of macadamia nut oil. Simmer for about 1 minute. That would be a dressing for the salad and you should pour it warm onto the place. It would melt the goat cheese a bit as well.


I already ate this twice today :).

    I made this today to have with the quinoa dish.  This salad is amazing!  The only think I would change is to cut back on the vinegar, but thats just my personal taste.  Otherwise, I love everything about it.  The pear and goat cheese are so nice together.

    I tried this again today, except I used pine nuts instead of almonds, and I used balsamic vinegar instead of apple cider vinegar, because I just really like balsamic.  It was SO good!!  Both my husband and I ate it up with smiles on our faces.  Thanks for such a great recipe!

    I made this salad today… and it was DELICIOUS!!!
    I used aceto balsamico instead of aple cider… but it was just… ah..
