Healthy Coconut Muffins Recipe

Hello My Lovies,

I have a super tasty recipe for you guys, I was inspired to make these by my recent visit to a delicious vegetarian restaurant, except theirs had a lot less coconut and a lot more sugar in it, probably a bucket of sugar cause they were a bit too sweet for my taste.  I made these from scratch, as usual all of my recipes have only a few ingredients and these muffins took about 1 our of baking.

I always use coconut oil instead of butter on top of my muffins or toast, but you can use what ever you like.

 

Ingredients:

 

Easy Recipes

 

  • Old Fashioned Oats – 2 cups
  • Shredded Coconut – 1 cup
  • Lite Coconut Milk – Half of a can ( or on eye )
  • Organic Cinnamon – 1 table spoon ( I like lot’s of cinnamon in my muffins :P )
  • Organic Agave Nectar ( depending on how sweet you like your muffins, I only used 5-6 tablespoons )
  • Organic Eggs – After I took the picture one of my eggs fell on the ground and I only ended up using 2.
  • Coconut Oil – ( to top your muffins after baking )
  • Sea salt – to taste ( I forgot it as usual to add it on the picture )

 

Preparation

 

Place the Oats into the blender and blend it until it becomes smooth like this:

Now add, shredded coconut, eggs, coconut milk, agave nectar, sea salt

Mix everything until it’s smooth

 

Preheat the oven to 365

 

Place the mixture into the muffin containers

As you can see It turned out to be 6 muffins.  They were very filling muffins not the light fluffy ones.  One was enough for me for breakfast and I would feel full.

 

Bake the muffins for 50 minutes to 1 hours.  Make sure you check on them at around 50 minutes.

When you take them out to eat top it with Coconut Oil, I love coconut oil because it has so many incredible benefits.

    Oh my God, looks so yummy! I love baking but I can’t do this, I can’t find coconut milk in Barcelona, could I use almond milk or it would taste weird?

      D you have plain, raw, whole coconuts you can buy? If so, you can crack one open and use the milk inside (which would be even better!!!).

        I believe the liquid inside the coconut is coconut water. You can use the meat to make coconut milk, though! You look up the directions online, but from what I recall, you soak the meat in some water and then strain it the next day and you have coconut milk. Then you dry off the meat in the oven and you have coconut flakes! Which you can also grind up into flour (again, if memory serves…) =)

    I will have to make these soon. I do not currently have any coconut milk because I make Popsicles with it and just ran out. I can just imagine what these smell like. I love coconut!

      Wow coconut popsicles sound heavenly!!! I love all of your ideas. I’m thinking to do what Lvette suggested about making soups and baking from the remains of the fruits and veggies.

        In a food processor or blender, mix 1 can coconut milk, 1/2 pineapple or 1 can of pineapple in pineapple juice and use the juice, and 1-2 bananas. Blend/process and freeze. Tis does make a lot so I usually do the extras that don’t fit in my Popsicle molds into ice cube trays. Sometimes I add my husbands vanilla whey protein powder. About 3 scoops. And since you live in Florida, these are great for hot and humid days.

    Coconut products are divine overall. Now I am addicted of coconut chocolate. Coconut oil i take with my coffee in the morning and then im working out and just later i have breakfast (while im on holidays). Also i use ghee butter, also very good. My main fats… plus avocado :))

    Now I finally know, what to bake for my sister:) She has birthday this week. I thought about Nutella&Ferero Rocher Cupcakes, but they scare me a little bit, lol, Nutella just screams “Binge” at me. That is an awesome alternative!!
